Ingredients:
- 200 grams of room-temperature butter
- 180 grams of sugar
- A pinch of salt (about 1 gram)
- 1 egg
- 400 grams of flour
For extra green color and flavor use spirulina powder:
- 7 grams (2 tsp.) of spirulina powder
Step-by-step:
1. Start by mixing the room-temperature butter with the sugar.
2. Add a pinch of salt to the mixture.
3. Stir in the egg.
4. Combine the flour with the spirulina powder.
5. Mix everything together and knead it into a dough. If the dough is too sticky, add more flour; if it’s too crumbly, add a few tablespoons of water.
6. Cool the dough in the refrigerator (30 minutes or more)
7. Roll out the dough using a regular rolling pin.
8. Sprinkle the surface with flour, then roll the dough once with an engraved rolling pin.
9. Use cookie cutters to press out your desired shapes.
10. Bake at 180 °C for 6-10 minutes (the baking time depends on the thickness of the cookies) or until the edges turn lightly brown.
*It’s best to let them cool on a wire rack.
**You can adjust the amount of sugar to your liking.
***If you don’t have spirulina, you can substitute it with turmeric, freeze-dried beets, spices, or food coloring (following the instructions on the package). To achieve a more uniform color, combine it with a few tablespoons of warm water and add it to the wet ingredients before mixing with the flour.
