How to cleaen embossed rolling pin?

After use brush to wipe away any left over dough and flour. Then gently scrub it with a soapy brush to remove the grease. Do not put wooden rolling pins in the dishwasher.

How to get good embossed result on cookies?

Do not add any leavener (baking powder) to the dough. The dough should be soft but shouldn’t stick to your hands. Cool the dough well before rolling it. Dust some flour on the dough sheet. Cut embossed dough sheet to cookies  and put them into your fridge for about 15-20 min. before baking. If it’s cold the pattern will stay when it’s cooked. When it goes from the cold fridge to the oven it doesn’t get a chance to spread before the outer layers have cooked and hardened.

Embossed cookie recipe

Ingredients 

  • 200 g (1 and ¾ sticks) butter
  • 200 g (1 and 3/5 cups) superfine sugar
  • 1 egg
  • 1 tsp vanilla sugar or extract
  • 1/2 tsp ground ginger (optional)
  • 1/2  tsp ground cinnamon (optional)
  • 400 g (2 and ½ cups) all purpose flour plus some for dusting. You can replace  ¼ of flour to corn starch.

Cream the butter and sugar together. Mix in the egg and spices. Sieve in the flour and combine into a dough. If it is a bit crumbly to hold, add a few drops of water to help bring it together. Once the dough has come together, devide it into several pieces, wrap it in cling film and put it in the fridge for 30 minutes. Dust a surface with a little flour. Roll out the dough with a regular rolling pin up to 1cm or ½ in. Dust some flour on the dough sheet then roll over the dough with the embossed rolling pin with medium pressure. Use the cookie cutters to cut out the shapes you want and pop the cookies on a greaseproof paper lined baking tray. You can reroll any scraps and repeat the process until it is all used. Put the cut out dough back into the fridge for a further 30 minutes.

Preheat the oven to 180ºC or 350ºF. Place the cookies in the oven for 8-10 minutes until the dough is firm to the touch and just starting to brown around the edges.

Care of wooden cutting boards

The care of your cutting board is simple. Wash your cutting board with soap and warm water. Dry immediately with a towel and let it air dry standing up with air flow. Once your cutting board is thoroughly dry, apply some oil directly onto the surface of the board using a small bar towel and let the oil soak into the cutting board. We recommended to oil your cutting board regularly. If your board has stains or smells, you can use lemon juice or white vinegar directly on the area. The acid in these liquids will neutralize the organic material or fats causing the smell.

DO NOT:

  • Put the cutting board in the dishwasher. The heat and water will warp and splinter the wood and void warranties.
  • Dunk or let the board stand in water. The wood will absorb water and potentially warp.
  • Use bleach. This will stain the wood and/or excessively dry the wood.
